The grapes are harvested by hand and pressed directly upon arrival at the company. Everything happens quickly to avoid the loss of aromatic precursors particularly sensitive to the heat of September days. The flower must obtained is lightly filtered and then placed in a steel tank where it undergoes a first fermentation. To keep the product always fresh and preserve its bouquet, the temperature is lowered to about 0°C and the refermentation in the autoclave takes place only after choosing the bottling periods (dioise method).
Excellent for aperitifs and throughout the meal.
